The Starlight Restaurant in Warren Michigan is one of our neighbor's favorite places to eat and they love their cream of cabbage soup! We finally worked out a "cut-down" version for home use. They also make a tomato based cabbage soup which is in the March 2000 issue of the Menu Minder and on our free recipes 1 page here at our web site. The restaurant is located on Ryan Road just south of the Reuther Freeway (I-696) in Warren and they're open seven days a week for breakfast, lunch and dinner. CREAM OF CABBAGE SOUP (From The Starlight Restaurant)

1 1/2 qt. chicken stock
1 1/2 qt. water
1 c. chopped onion
1 c. chopped celery
1/2 c. chopped carrot

Place in large (4 qt.) soup pot and bring to the boil. Add 3 T. Miner's chicken base and stir in. Add 1 T. salt, 1/2 t. white pepper, 1 1/2 t. garlic powder, 1/2 medium head shredded cabbage and 1 c. sauerkraut, rinsed and drained. Cook, uncovered, 1 hour.

CREAM OF CABBAGE SOUP THICKENER:
(this is the trick that makes this simple soup so special)

Mix together in a bowl 1 1/2 c. sour cream and 1 1/2 c. flour. Add 1 1/2 -2 c. milk and mix with a wire whisk to the consistency of a thick milkshake (the difference in the amount of milk determines the thickness of the soup). Add 1 drop egg shade coloring and heat through.
(serves 12 bowls or 16 cups)
