If you have ever been to your local Greektown for dinner chances are you have had this Greek green bean and potatoes in tomato sauce dish called fasoulakia yiahni, it is wonderful. We also have a hint on how to make this into a main dish stew recipe that you're going to love...Yasoo!
GREEK STRING BEANS AND POTATOES IN TOMATO SAUCE
2 lb. string beans
2 onions, chopped
3/4 c. olive oil
1 can tomato sauce
2 t. salt
2 potatoes, quartered
2 carrots, sliced (optional)
1 c. water
1/4 c. chopped celery (optional)
Sauté onions lightly in olive oil. Add tomato sauce, salt and pepper and simmer about 15 minutes. Add remaining ingredients. Cover and cook slowly 1 hour or til tender.
Note: try adding garlic and cumin. You can add 1 1/2-2 inch cubes of lamb shoulder sautéed with onion and garlic and make the recipe into a stew (Thanks to Georgia Johnson, the Greek chef who gave me the stew hint - Rob).
