NITA'S SWEET POTATO CASSEROLE
3 c. cooked sweet potatoes, mashed
1 c. sugar
1 t. salt
1/2 t. cinnamon
2 eggs
1/3 stick melted butter
1 c. milk
1 t. vanilla
Put all casserole ingredients into a bowl and beat at medium speed for 5 minutes. Pour mixture in a greased (1 1/2 to 2 quart) casserole.
SWEET POTATO CASSEROLE TOPPING:
1 c. light brown sugar
1 c. pecans, finely chopped
1/2 stick butter
1/3 c. self rising flour
1 c. flaked coconut
Mix all the sweet potato casserole topping ingredients together well and spread on top of the casserole. Bake 350° for 1 hour.
