1 c. oatmeal
1 c. oat bran
1 c. whole wheat flour
1 c. raisins
3 bananas (good use for overripe ones)
2 egg whites
1/3 c. apple butter
1 1/4 c. skim milk
1/2 t. salt
1 t. baking powder

Place first 5 ingredients in a large bowl. Combine last 5 ingredients in small bowl. Add wet ingredients to dry ingredients with mixer and mix well. Spray muffin tins with non-stick cooking spray. Fill tins with roughly 1/3 c. of mix. Bake at 400° for 20 minutes or until a toothpick inserted in the center comes out clean.
