TWO-MEAT PIZZA WITH WHOLE WHEAT CRUST

WHOLE WHEAT PIZZA CRUST:
1 pkg. (1/4 oz.) active dry yeast
1 1/2 c. warm water (110 -115°)
2 T. vegetable oil
1 1/4 c. whole wheat flour
2 T. sugar
1/2 t. salt
1 3/4-2 c. all purpose flour

WHOLE WHEAT PIZZA TOPPINGS:
1 can (15 oz.) pizza sauce
1 t. sugar
1/2 c. sliced mushrooms
1/4 c. chopped onion
1/4 c. sliced ripe olives
1/2 lb. bulk Italian sausage, cooked and drained
4 oz. Canadian bacon, chopped
2 c. (8 oz.) shredded Mozzarella cheese

In a bowl, dissolve yeast in water; add oil. Combine whole wheat flour, sugar and salt; add to yeast mixture and stir til smooth. Stir in enough all purpose flour to form a soft pizza dough. Turn onto a floured surface and knead til smooth and elastic (about 6-8 minutes). Place in a greased bowl and turn once to grease top. Cover and let rise in a warm place for 15-20 minutes. Punch down pizza dough. Pat dough onto the bottom and 1 inch up the sides of a greased (14 inch) pizza pan. Combine pizza sauce and sugar and spread over the crust. Sprinkle with mushrooms, onion and olives. Layer the pizza with sausage, Canadian bacon and cheese. Bake 350° for 25-30 minutes or til whole wheat crust is golden and cheese is melted
(yield: 8 slices of pizza)
