MAMA MILDRED'S TOP OF THE STOVE APPLES

Melt 4 T. butter in a nonstick pan over medium heat. Peel and slice 6-8 Macintosh apples into eighths (about enough for a pie). Add to the melted butter. Sprinkle with 1/2 c. lightly packed brown sugar and 1 level teaspoon of cinnamon. Cover and cook about 15 minutes until they are tender but not mushy. Watch closely so they do not burn. Stir lightly just before they are done. If you cook them too long they will turn to applesauce. Be sure you add no water.
(Serves 6-8)

NOTE: If you want applesauce, just add 1/4-1/2 c. of water and cook til mushy. Raisins and chopped walnuts may be added if you like.
