ANTI - ARTHRITIS STIR FRY

1 T. canola oil
2 cloves of garlic, thinly sliced
2 T. fresh ginger root, finely chopped
1 onion, thinly sliced
2 stalks of celery, thinly sliced
1 red bell pepper, thinly sliced
8 oz. salmon fillet, cut in 1½ inch pieces
hot sauce and low sodium soy sauce to taste

In large skillet, heat oil on medium-high heat. Add all vegetables and cook 5 minutes, stirring frequently. Add salmon and cook 2 minutes or until done. serve with rice or thai noodles.
